Spanish Olives
Spain is the world's largest producer of olives. Mainly in Andalusia (subtropical zone), the olives are cultivated on huge farms and are managed fully mechanical. After harvesting, they have to be treated by fermenting by lactic or by leaching. Later on, they come in salt lake.
Spanish olives are fleshed and mild to strong in flavor.
